kevin gibson, the chef, made lunch at portland’s fabulous ‘EVoE’, on hawthorne. saturday it was fresh squid, french beans, choice cherry tomatoes in a vinaigrette, spiced with bacon bits and ground pimento. luscious, steamed tender squid meat, curling around its sauce, beans barely parboiled, sweet scented tomatoes as just off the vine.
a first serving inhaled in a heartbeat, the second leisurely tasted, toying the squid’s tender texture, each bite burnished on pinot gris.
deviled eggs, as usual on our visits there, up front, softly scented charanteuse melon on ham as desert.
