smoked duckbreast

so very simple. i made a german potato salad, steamed small potatoes, cut in half while hot and sunk in a garlicky vinaigrette to soak and to cool. take all the fat off the smoked duck breast, cut into bite-sized chunks and add to the potatoes, mix madly, then add chives, tarragon, radish chunks and place nicely over small bib lettuce. yes, really simple, but oh, so delicious on a hot and humid portland day.
